Making Chick Pea Flour (gram)

I have not, but this is something I want to do! What would you make with chickpea (garbanzo beans) flour?

Me? I would make falafel. I recently read about falafel being made as an alternative to other proteins in the Middle East. This recipe says to make falafel patties. Falafel is usually made into balls and deep fried, then served in a pita bread cut in half and the pocket split open.

Ingredients
  • 1 cup Garbanzo Bean Flour
  • 1/2 tsp Sea Salt
  • 1/4 tsp Baking Soda
  • 1 tsp Parsley Flakes
  • 1/2 tsp Ground Cumin
  • 1/4 tsp Ground Coriander
  • 1/2 tsp Garlic Granules
  • 1/4 tsp Onion Powder
  • 2 tsp Lemon Juice
  • 1/2 cup Water (hot)
  • 2 Tbsp Olive Oil for frying
Instructions
  1. Combine all the dry ingredients in a bowl and blend thoroughly. Add the lemon juice and hot water to the dry ingredients and stir until combined. Let the mixture rest for 10 minutes.

    In a frying pan, heat oil on medium-high heat until hot. Add the falafel batter by the tablespoon and flatten slightly. Fry on both sides until golden brown. Place on paper towel to drain oil. Depending on the size of your frying pan, batter will need to be cooked in a couple batches. Makes 12 falafel patties.
 
Another thing to make from chickpea flour: hummus! Neither falafel nor hummus have to be made from garbanzo bean flour. They are both usually made from cooked and pureed garbanzos, but the flour works as well.

Ingredients
  • 3/4 cup Garbanzo Bean Flour
  • 2-1/2 cups Water
  • 2 to 3 Garlic cloves minced
  • 1/4 cup Vegetable Broth
  • 1/4 cup Tahini
  • 1/4 cup Lemon Juice
  • 1/8 tsp Tabasco Sauce
  • 1/2 tsp Ground Cumin
  • Salt and Pepper (to taste)
  • 1/4 cup Olive Oil
Instructions
  1. Bring 2-1/2 cups water to boiling on medium heat.
  2. Whisk the garbanzo bean flour into the boiling water. Cook 1 minute stirring constantly.
  3. Turn heat down to medium low and continue cooking 5 minutes. Let cool.
  4. In the bowl of a food processor, puree the garbanzo mixture, garlic, broth, tahini, lemon juice and Tabasco sauce until smooth. Then add the cumin, salt, pepper and slowly pour the olive oil through the feed tube of the processor.
  5. If mixture is too stiff, add more broth to get desired consistency.
  6. Spoon and scrape the mixture into a bowl, cover with plastic and let sit for at least one hour at room temperature.
  7. Taste to see if more lemon juice, salt or pepper is needed.
 
I've made bread from garbanzo bean flour but I didn't grind it (I just bought it that way). I can't use wheat flour so I have tried a great many things. The garbanzo bean flour had a very interesting taste that I did enjoy. I don't remember what other flours were mixed with it.

Hiwall, is it the gluten that you can't have? Are you gluten free?
 
I had two cases of garbanzos getting ready to expire, so I dehydrated them and then ground them for instant hummus (add olive oil and seasonings). So, these were cooked garbanzos.
I have dried garbanzos stored and got a grain mill that does dry beans, as well as grain, but haven't tried this yet.
I've heard of using ground beans in brownies for extra protein.
 
I love hummus but never made it from bean flour. I do can beans of all kinds.

Just been trying to stay away from grains and thought about making a flat bread from bean flour but wasn’t sure of the taste, etc.

Amish Heart I have a good recipe for brownies that takes beans, if interested.
 
Hiwall, is it the gluten that you can't have? Are you gluten free?
I eat totally Gluten-free and have for a few years now. I have no idea whether it is the wheat or the gluten. It is difficult to eat a good diet without any wheat products. But I have adapted. Our stored food is all gluten-free. No wheat berries here.:)
