We work in the yard a lot in early summer so quick meals are handy.

Fried Rice is easy and done in 20 minutes if most ingredients are already cooked.

Cook rice.

We buy the whole $5.00 chickens at Publix or a non cooked hen [ if it is not vegetable fried rice ] , organic carrots, spring onions, fresh ginger, canned green peas, eggs.

We take chicken off bone, grate carrots, cut onions , ginger, can peas. Put all in small seperate freezer bags..

Get fry pan hot with olive oil, scramble a few eggs . Cut up eggs, add all to hot pan with a couple tablespoons of soy sauce. Mix in the rice and its done.

We like chinese noodles, duck sauce, hot mustard for condiments.
We did make out own egg wraps but that is not easy task, so we buy them and make our own ingrediants if we have egg rolls.

Yes, easy and can be easily varied. How about using lettuce wraps?

Weedy that sounds good too. I'll have to try those soon. We eat stir fry also. Hubby thinks he has to have meat in it but he will eat it without meat now and then, plus I give him my meat. I eat some eat not much though..

Do you put anything in the wrap with the lettuce ?
 
I like to make salads for summer eating. They are cool on hot days. I like to make them early in the day before it gets too hot. When I have company, I will make two or three up and we just eat from them.

I like the Southwestern corn and bean salad. There are many variations for this recipe, and I have made it many different ways. I always look for a recipe online. There are many variations of this salad, including some with lettuce chopped up. I never add lettuce to my salad, but will use some when I serve it up.

Southwest Black Bean and Corn Salad
Dressing:
  • 2 tablespoons fresh lime or lemon juice
  • 3 tablespoons extra virgin olive oil
  • Kosher or coarse salt and freshly ground black pepper to taste
  • 1/2 teaspoon ancho chili powder
Salad:
  • 2 (15.5 ounce) cans black beans, drained and rinsed
  • 2 cups lightly cooked and cooled corn kernels (fresh or frozen- see Note)
  • 1 cup chopped red or yellow onions
  • 3 bell peppers, diced (red, yellow, orange, or a combination)
  • 2 Haas avocados, diced

1. Make the dressing: In a small container, combine the lemon or lime juice, olive oil, salt and pepper, and chili pepper.

2. Make the salad: In a large bowl, combine the beans, corn, onions, and peppers. Shake up the dressing, pour it over the salad and toss to combine.

3. If you want to serve it right away, gently mix in the avocado. If you have time, this salad is better if you make it a day ahead, refrigerate it, and then just add the avocado right before serving.

I was thinking your fried rice.

There are other ways to make lettuce wraps. I haven't made them very often.

and of course lettuce salad.

Have any of you tried the army lettuce salad? This one is what an old WW11 friend said the way they made salad on the ship.
He used an old soup can to cut the lettuce, added onions, mayo ,salt pepper to taste and lettuce.
It is very good and easy to chew up too. Put in large bowl, use can to chop up lettuce and onions, add ingredients. No can a thin rimmed plastic cup will do.

Interesting way to make a salad. My grandmother used to use a can to chop things up.
 
Easy Strawberry Pie (Like Frisch’s and Shoney’s)

Ingredients
  • 1 refrigerated Pie Crust
  • 2 cup sliced Strawberries
  • 2 1/2 tbsp Cornstarch
  • 1 1/4 cup Sugar
  • 1 1/2 cup Water
  • 1 box 3 oz Strawberry Gelatin (like Jell-O)
Instructions
  • Preheat oven to 350.
  • Place pie crust in pie pan and crimp edge.
  • Use a fork to poke holes in bottom.
  • Bake for 15-18 minutes or until edges are browned.
  • Allow to cool.
  • Layer bottom with the sliced strawberries
  • Stir together water sugar and cornstarch and bring to a boil.
  • Simmer, stirring constantly, until thickened.
  • Remove from heat, add Jell-O and stir until dissolved.
  • Pour mixture over strawberries.
  • Refrigerate until set.
  • You can decorate with whipped cream before serving

One of my favorite summer meals is a ham sandwich on a roll and potato salad. It is a great meal on a hot summer day. I am not posting the recipe for potato salad. We all have our favorite potato salad recipe don't we?

When my daughter was a newborn, shortly after she came home from the NICU at 15 days old, we had friends over and this is what we had to eat. Later, people talked about what a good meal that was. I still remember it. We had kaiser rolls for our sandwiches.

We use to get Parker House Rolls from bakery now and then when I was a kid. Mama liked them and so did we.
Don't know if they still make them now.
 
Husband's been cutting down on carbs, so we've been eating those "wheat flats" Orowheat puts out instead of sandwich buns. We had them tonight with cooked, shredded chicken, red onion, lettuce, tomato, and swiss cheese. A little mayo. Husband adds hot mustard on his. Had fresh green beans and strawberries. Was easy.
 
Just cooked fried rice and made 24 egg rolls from scratch,except the wrappers no way will I do that again. Will freeze some of the egg rolls.
I cut up 3 fried beef hot dogs in place of chicken or pork. Mixed it in with the carrots,onions,scallions, ginger, sprouts ,eggs.Cooling the rice now to stir in.
I really like egg rolls.

I cut up 3 fried beef hot dogs in place of chicken or pork. Mixed it in with the carrots,onions,scallions, ginger, sprouts ,eggs.Cooling the rice now to stir in.
I really like egg rolls.
Yum! One thing that I use now when I make eggrolls is the coleslaw mix from the grocery store. It usually has shredded carrots in it. Then I add the other stuff to that. I like to use ground pork. I know not everyone eats pork, but it is an easy meat to add.
 
I've already said many times that I love salads. One of the salads that I like, especially in the summer time is a Greek salad. The grocery stores in my area now have an olive bar, like a salad bar. One of the things on the olive bar is Greek salad mix--feta cheese, a variety of olives, peppers, and tomatoes. With some lettuce, cucumbers, red onion, Greek dressing and the Greek salad mix, it is a quick and delicious meal. Add some pita bread and it is even better.

  • 1/3 cup red wine vinegar
  • 1 lemon, juiced
  • 1 tsp Dijon Mustard
  • 2 garlic cloves, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup olive oil
INSTRUCTIONS
  • Add all of the ingredients, except the olive oil to a bowl and whisk together.
  • Slowly add the olive oil and whisk vigorously while pouring until the dressing is emulsified.
TIPS
  • This dressing will last for up to one week in the fridge.

Good idea Weedy. But when we make them we make enough to freeze too so I used a whole head of cabbage just for egg rolls. I don't use any meat in my egg rolls. Sometimes put it into the stir fry or fried rice though if we have it.

We made some a couple weeks ago and added some thinly sliced Pastrami to the coleslaw mix, and scallions. First time we had made egg rolls. They turned out really good. We also kicked around about 20 different ideas to try sometime.

BacP we like to use soy sauce ,chinese hot mustard and Duck Sauce,but lately we just use peach or apricot preserves instead of duck sauce, it is just about the same thing.
 
I found a place in Seattle years ago that imported olives and cheeses from all over the world. They had olives in big barrels just like old times.
I bought olives and cheese and a loaf of bread for lunch. I ate almost all I bought and my stomach hurt all afternoon, but it was worth it.

I wonder if it's still there?

Some things are just worth the pain, huh backlash? I had 3 pieces of almost home made pizza last night knowing I didn't need so much.

The preserves sound good. We hadn't even thought along those lines. Soy and hot mustard is high on our list. Seaseme sauce goes well too. We've also gotten to using Ginger quite a bit. I love that flavor.

I looked up the recipe for Duck Sauce and basically that is what it mostly consist of. After the jars of store bought getting black rings around the tops I decided to stop using them. Don't know why because it wasn't like that for years now, just last couple years and dates are good. And it is in at least 3 different brands.

This to me is important , buy the low sodium one the others taste like a spoon full of salt. Or at least check sodium content.

I usually buy sweet and sour sauce for my egg rolls, but when I was much younger, we made our own. I don't remember the recipe and haven't seen it in a while, but I believe it had pineapple juice in it.
 
I want to share my favorite family recipe. When I was kid my mom always cook me boil chicken breast, and today I can to cook this dish on my own. I eat chicken breast with rice or sometimes potato. You can eat boil chicken breast in summer and any time of the year
I never thought to eat chicken breast this way. We usually bake it. I think a good amount of seasoning would be really important,
