Chicken Scalopini with Roasted Baby Carrots and Potatoes

Today I'm making Haluski using smoked chicken sausage
 
I cooked some pork tenderloins out on the Traegar pellet grill (with hickory pellets). Man, do those things come out fantastic that way. So moist, so tender...

I added a side dish of the stuff below we found at Costco and decided to try. It was really good. Used chicken flavor "Better Than Bouillon" to cook it in. Added a touch of course ground sea salt to the rice mix, and some BBQ sauce to the pork. Wow. Great dinner!

p.s. - you do have to cook that rice mix about twice as long as the instructions say, otherwise there is too much water that doesn't absorb. I don't know if that's always the case, or just a problem up at elevation here in Colorado.

I have seen the Ancient grains at Costco and considered getting some. Are they gluten free?
 
Homemade chicken pot pie or chicken taco's.
But leaning toward taco's.
Never mind about the chicken pot pie or chicken taco's.
Tried new to me recipe.
Let's just say it's an acquired taste.
And I haven't acquired it as of yet.
Spaghetti sauce made with bbq chicken in it.
So lunch and supper will spaghetti with chicken sauce.
My vegetarian niece sent it to me.
She uses tofu extra firm in place of chicken.
And that also an acquired taste too.

Not something I would want to eat all the time.
But once in while(long while) it wouldn't be too bad I guess.
Definately know I don't like bbq tofu extra firm.
But I do like to cook and try new recipes.
No clue what's for supper tonight.
Maybe chicken taco with cole slaw mix instead of lettuce.
I have trouble with lettuce sometimes.
 
slow roasted commie pig with roasted liberal taters and Brussels sprouts to make it all taste better.
Now, nobody has Biden signs near me. (they don't even burn well, but they do a pretty good job of holding targets) as long as you don't mind shooting at things as close to the ground as a snake.
