This year I waited until the majority of my peppers were red before I canned them. They definitely have a sweeter and richer flavor when done this way. The seranos were the best! first time I ever let them go red. I also dehydrated a bunch and sent them through the coffee grinder for some nice powder. Great on eggs in the morning.

Snappy you can use your own judgement but I just let mine be ornamental. My friend made pepper sauce out of his and it was extremely hot. Of course it is pretty in the jar.

Well, all they do is look pretty now, so I may give the sauce a try. Then they can look pretty on a shelf because I don't think I could use it if really hot!
 
Those sure do look pretty! I let my cayenne and tobacco peppers turn red before I pick them, even a few of my jalapenos because I like the mixture of red and green in the jars. I have pickled some, candied some, & some hot pepper sauce but mainly I have just been dehydrating whole. That way I can just rehydrate when need it or I powder for seasonings.
