What's Everybody Canning?

I have no idea what Clear Jel is, ive heard of it but that's all.

What is it, what does it do and how do you use it?

Its a thickener that can be used for canning. It won't separate like flour and cornstarch will.

I am getting "in the zone" ready for the upcoming gardening and canning season. (you may have noticed).:ghostly:

I'm approaching it with real forethought and planning esp. the tomato sauce but I'm not even sure how many jars
I plan on making considering it isn't even planting season yet.

Tomato products are a huge part of my kitchen economy so the ideal would be to get enough to get me through
to the next growing season.
Which means probs. more than two pints of sauce or whole crushed tomatoes per week.
The Roma/plum variety of tomato I've chosen sets fruit all in one hit so I'll be hellish busy for a
bit at harvest time.
I'm planting 2 9mtr rows which will either get me into or out of trouble depending on your point of view.
 
I canned 12- 1/2 pints of lantils yesterday.in which that got me to thinking.it'd be a good idea for me to do that with vegetables as well seeing how it's just my dog n me now.

This weekend, I canned 9 quarts of chips. I’m not sure how to upload a photo as it only gives me the url option not a browse option. We don’t eat very many chips but like them with taco soup etc.

I use a vacuum sealer but I have also done hot oven canning which I prefer for long term staples like rice or beans. We don’t eat much grain but I still like the bulk bargains and comfort of having the reserve in the pantry.
I think it was @Tank-Girl talking tomatoes. You’re talkin’ my language. For tomatoes, I try to do one thing every other year. So one year I do enough diced tomatoes for two years then the next year I do enough tomato sauce for two years except I ran out and just had to buy a case to tide me over. Tomatoes weren’t as plentiful 2 years ago. That way I only have 1 kind of mess going on or maybe it’s just so I only have one process to think about (I like simple.)
Also, I think it was @Davarm talking about fruit preserves. You can also just cook them down like tomatoes to sauce to paste only with berries or whatever.
