Tonight I had a pulled pork sandwich, w/pickles of course, got to have pickles with a pulled pork sandwich, sacrilege if you don't :D...

Fried up a batch of tater tots to go with... and a couple of spoonfuls of sweet coleslaw from the good deli in the big town...

Made a mistake... didn't check the "use by date" on the coleslaw I bought. The use by date was last Wednesday, the 6th. No worries, still smelled sweet but it's going out with tomorrow's garbage pickup! ;)
 
Yesterday I just made us some soup and sandwiches since hubby had leftovers from saturday's takeout for his lunch today

Today I'm making unstuffed cabbage rolls lol
and I have half a loaf of Italian bread that I'll make garlic bread

edit to add:
Me: We're eating low carb tonight
Hubby: What does THAT mean?
Me: No pasta, rice,noodles,potatoes......
Hubby: Is there meat?
Me: *chuckles* yes all the meat you can eat!


He'll be happy about the garlic bread. He loves carbs. So hard to get him to cut back

Today I'm making a big batch of curried apricot chicken in the slow cooker.
I'll serve it with rice.
I've been eating rubbish because it's easy and quick but I've
had low grade stomach pain for over a week.
Time to get back on the straight and narrow.
Left overs will be bagged up into meal sized portions and frozen.
 
Its 75 degrees here today ahead of that storm in the middle of the country so I'm making some baked shrimp and pasta salad. There still some garlic bread leftover from yesterday's supper so hubby can eat that
 
Shrimp sauteed in butter with a bit of white wine and sourdough rolls for my wife and Venison steak with veggies - cauliflower and brocolli mix that I will share.
 
I decided to push my luck and had a toasted bacon sandwich with spicy BBQ sauce.
I cooked the bacon until crisp in the air fryer first.

The air fried bacon is the only way I can eat it now without major stomach upsets.
It's the same with sausages. Split them down the middle so the fat has a chance to drain out.
 
Leftovers. Fajita stuff. Black bean salad.
That corned beef will have to wait another day.
@Weedygarden what else do you fix with yours? I cook cabbage, carrots, and potatoes.
At least I wore sage green today.
I cook a few potatoes, carrots and some onion, and also the cabbage. I do have a plan to have a few reuben sandwiches this week, and found some Jewish rye bread, kraut, Swiss cheese and thousand island dressing.
 
What is in the black bean salad? I have never had black bean salad before.
Havent i posted this before? I dunno.

For my crowd I use 2 or 3 cans, but let's pretend it's only for 2 or 3 people who aren't big eaters. Ingredients vary.
1 can or 2 cups cooked, rinsed, drained, black beans
Optional can or half can of corn
1/4 of a red or green bell pepper
1/2 can black olives (or not)
Chopped tomatoes (I use the small or grape tomatoes)
Cucumbers (small ones, 1 or 2) cut however you want, peeled or not
1/2 avocado or less
Dressing: 1 lime, 1/4- 1/3 cup of extra virgin olive oil, fresh cilantro chopped (as much as you want)
I love this. I make another salad with garbanzo beans replacing the black, basil or dill replacing the cilantro.
