We grew a lot of eggplants this year we dried and put up. I'll try some eggplant lasagna this Fall or Winter.

@Meerkat Would love to know how it turns out. We don't eat many grains so haven't had lasagna for 7-8 years :-(
I have my tomato skins on the dehydrator. Ran first batch of tomato sauce today. I like to dry the skins then put them through the grinder to make tomato powder. It's great for thickening things up.
Also, began cleaning my dried lavender to infuse. It's sooo expensive to buy. I cut more and have it hanging to dry. More yet to do.

LadyL, I'd like to know too, so hope we will be doing it soon.
I think it will be good though since meatless zucchini lasagna is very good ,imo. All the spices and cheese you don't miss the meat anyway.
Good idea to make your own tomato powder,never thought of that.
 
I have a Nesco dehydrator and after letting the basil run for 2 and a half days straight, I gave up and put it in the oven to finish. I think the herb setting may be too low.
I've noticed that also so I just upped the temp very slightly. Seems to have worked

I noticed the celery leaves I dried, dried really fast as did the thyme. Maybe its just the types of herbs that making them take so long

I like it too along with orange marmalade. I'd rather have those on my pancakes than syrup lol

It's the apricots fault! I don't eat many fruits but I love me some dried apricots :)

We were gifted 2 boxes of apples so as soon as I'm finished drying tomato skins, I will start in on apples.
