Celebrating 51 years tonight, Alexandra made one of my favorite meals! Chicken fried steak, mashed potatoes and gravy, steamed green beans along with homemade biscuits and molasses and a fine goose berry pie and ice cream for dessert.

Tonight I am going to chop up some zucchini, carrots, cauliflower, and broccoli, coat it with garlic olive oil, sprinkle it with salt & Montreal steak seasoning, and get it roasting in the oven before heading outside to grill a marinated pork loin. Pork loin went into the marinade yesterday.
 
Going to experiment and fry up a bunch of zuchini, eggplant, acorn squash and green tomatoes, then chill the mix, add cubed cheese, ham, beef, and make a "whatever salad!!" Throw in some bell pepper, red sweet pepper and onions.....maybe use bleu cheese dressing?
 
Tonight we are having shrimp (for my wife) and salmon. The shrimp will be sauteed in garlic, onion and olive oil and the salmon will be poached in wine and lemon juice with a touch of dill weed. My wife will have Texas toast and we will share some steamed spinach.
 
I picked up some london broil roast beast at the good deli yesterday. So... tonight was open faced roast beast sandwiches on Italian bread w/smoked gouda cheese... so yummy!

sides were english peas and cabbage. I usually don't buy fancy cheeses but a couple of months ago I had a sample of meat/cracker with smoked gouda at the grocery store... Now that's some yummy cheese. It's to pricey to put on everything but for roast beast or crustini's... so good!
 
Sunday is, as much as possible, a day of rest in this home. So tonight we are going to be making some pizzas using pre-made cauliflower crusts purchased from the grocery store. They are not as good as homemade but they are a lot less work. We are also going to have some cantaloupe as I see the two melons on the kitchen counter have reached full ripeness.

Down her we call it Country Fried Steak. But it is good no matter what you call it,one of my favorites.

VenomJ you got us on the sub kick for awhile there.

Today we got busy cutting up onions, ginger to freeze for stir fry and fried rice. We like quick easy meals in the summer.
We already have carrots we canned that are not as precooked good but handy.
I'll slice and fry up some of the hot dogs we got on sale and organic ? chicken put in carrots,ginger, Spring onions , cut up scrambled eggs and rice and soy sauce. We use apricot or peach jelly for duck sauce.Side of cucumbers in vinegar.
Will have this a couple days for dinner.
 
@snappy1 , is that spoon bread same as drop biscuits? I use a spoon to drop my biscuit dough, no rolling or cutting.
Sometimes I'll just pour dough into biscuit pan and spread it then cut square biscuits out of that.

No ma'am. More like a cross between cornbread and corn pudding. Served with a spoon rather than cut into squares.
 
Wednesday night is always a busy one around our house, so we will be eating on the go. I will probably go with peppered turkey, bacon, tomato, lettuce, and mayo on a low carb green onion wrap.
