I know this is not traditional kimchi and its not real a recipe I have or went by, Its more like something I just threw together but it tastes real good but the main thing is the probiotics. It has been fermenting for 4 days and seems to have fermented really quickly because I used some Wildbrine probiotic live shots I think it was called, basically kimchi juice with lemongrass. I had been on a keto diet which worked great, I lost 30 lbs and feel much much better but I was using erythritol and it was killing my gut bacteria and every time I would lie down I got a really bloated feeling because my food wasn't digesting. The kimchi juice cleared me right up.
I urge everyone to just jump in there and ferment, your gut will thank you for it.

I am also keto and huge believer in eating fermented foods to improve intestinal flora. We currently buy kraut and pickles from a local family who cans about 5x more than they could ever eat. I will even drink the pickle juice to make sure it doesn't go to waste. We currently can spicy pickled green beans but are hoping to expand.

That's great, I like to see people canning their own food. The only thing is if you can fermented foods you kill the probiotics that are in them. If you cook it or seal off the air you kill them. I don't know if you can freeze it or not but fermented foods keep for weeks and weeks in the fridge and the live bacteria is what you want for good gut health.
Fermenting is actually easy and is safer than canning,you can't get botchalizm, ( I botched that name up and spell checks not helping me). Just make sure it tastes and smells like sauerkraut.
So get fermenting, your gut will thank you for it.
