Tonight I had wings again... I finally have cooking them down pat... Cold from the fridge I steam them for 7 minutes then deep fry them for 3 minutes and 20 seconds at 375 in my fry daddy. They come out juicy on the inside and crunchy on the outside!

I added corn on the cob and canned english peas... made a tasty meal.

We had baked cod, mac and cheese and beets yesterday


Today I plan on making a one pot meal using ground sausage,pork and beans and cooked macaroni. I'll have some green beans on the side
 
We ordered calzone from the delivery pizza place. The kids are at a football game for the evening, and our son is filming at the Whiskey Classic something or other in Santa Fe. So, a quiet night. I started marinating carne adavado in hot chili sauce and seasonings to slow cook for tomorrow night. That and pozole and enchilada are on the menu.
 
It's my favorite time of the year! I can sit around a fire and cook! Northern beans, smoked pork necks flavored up with onions and jalapenos with a big slice of honey cornbread and a wedge of yellow onion.




I would be there for dinner, if only I had an airplane and no obligations. ;)
 
I think I'm going to fry up some catfish. I bought a packet of those "Just add milk" hushpuppies, might try those also.

Edit: The fish, salad and corn were great. The hush puppy mix was crappy. I want to learn to make them from scratch, this was just a test run.

Its cool outside, raining off and on. I have a big portion of Brunswick stew thawing out in the fridge. I'll pop the last piece of garlic toast in the air fryer. It will be perfect for a day like this. I have a container of fresh strawberries in the fridge. I think I'll have some of those for dessert.

I change it up a bit--white chocolate chips, pecans (instead of macadamias) and 1 tsp. of vanilla and 1.5 tsp. of maple extract. They are amazing and I am now officially sick of them. LOL
