Look behind you in that dark corner.
Mac n cheese with re-fried beans.
Do the Mac as usual.
Add 1/4 cup of re fried beans on the side.
Serve with green bean chow chow and a tortilla.

Tomato n rice coffee clutch lunch.
Boil 2 cups of rice+2 stalks of minced celery.
add 2 cans of tomato soup, garnish with shredded Mozzarella cheese.
serve with a sandwich.

Creamy potato soup.
Allow 2 cups of water for each person.
chop 3 sticks of celery and shred 2 carrots with a potato peeler, 1/4 of 1 apple sized onion, minced, 1/4 stick of real butter and one medium sized potato chopped into fine chunks, boil until the potato is done and add 1/4 can of evaporated milk and reduce to a simmer and add potato flakes until its thick enough to suit you. serve with garlic grilled Texas toast.

Chicken chowder.
In a 1 quart pan, combine:
2 cans of pre-cooked chicken.
1 drained can of mushroom chunks.
1 drained can of sliced potatoes.
1 can of creamed corn.
1 can of cream of chicken soup.
Simmer 20 minutes on low heat, avoiding a full boil and stirring often.
Serve with Texas garlic toast.

Deep dished pizza for 4.
Take 2 loaves of french bread and slice longways.
hollow out the inside down to 1" (thats the first knuckle on your thumb.)
In a food processor combine one package of pepperoni and a 4" chunk of Polish sausage cut into 1/2" chunks and chop fine. add 1 can of drained mushroom chunks and mix with half a jar of your favorite spaghetti sauce. spoon it into the bread and cover in your favorite shredded cheese. bake until the cheese is bubbly.

Trailer park Ruben sandwich.
In a light oil, saute a can of mushrooms 1/4 cup of onion and 1 diced green bell pepper. add 1 can of corned beef and warm it up, add provolone cheese and serve on a sour dough roll.

We have lots of home canned "quick meals", but I don't think they count because we can them and have them ready to go when we need them:
Vegetable beef soup
Chicken Vegetable soup
Beef Barley soup
Minestrone soup
Venison stew
Turkey Chili
Split Pea soup
Lentil soup
Potato Leek soup
Canned Meatloaf
Canned Venison Sloppy Joe stuff

Open the jar, dump it the in the sauce pan/skillet heat it up while adding any secret ingredients to make it yummy.

We also make frozen casseroles, but they have to be thawed and take 30 minutes to cook....
 
Not exactly a meal per se, but really good snack. You can make up a bunch and freeze them. Then just pop in the microwave or air fryer to reheat thru.

A local gas station would sell these in their hot case. When the owners sold out, the new owners didn't keep them on the menu.......so I started making them at home.

Cheesy Bacon Dogs

hot dogs
cheese, shredded or sliced about 1/2 wide and not quite as long as the hot dog.....any type of cheese will work
8 to 10'' sized flour tortillas
thin sliced bacon that's sticky greasy with fat, it helps act like glue.


Lay out a tortilla, top with a hot dog & cut a slit into the dog without cutting thru, just make a pocket. Stuff the cheese into the pocket. Roll up in the tortilla. Carefully holding one end of the tortilla dog in one hand, start wrapping one slice of bacon around the dog to the other end. The fat in the bacon should help it adhere to the tortilla to hold it all together without coming apart. Place the dogs in a pan of hot oil bacon ends down first (hopefully the bacon ends are on the same side). Fry in oil till bacon is crisp and tortilla a dark golden brown. Drain on paper towel.


The tricky part of this is how the bacon comes together on the tortilla. Getting both ends of the bacon to end on the same side will help to keep the bacon on the dog as it cooks. Cause once that bacon hits the oil it will start to curl and shrink and that's why if both ends hit the oil first it will shrink and curl around the dog...........if the ends don't line up and only one side goes down, or neither side, the bacon will fall off into the pan, and possibly the tortilla will unwind as well. If needed, you can use toothpicks to keep the bacon and tortilla in place. Just make sure the toothpicks are also lined up in the same direction to make it easier to fit in the pan. These things I've learned the hard way of trial and error.. BUT even the errors taste good.


These are very freezer friendly if you make alot at one time. If you have a deep fryer where they can cook & float around, it's probably best to use toothpicks to hold them together.

I did try making them in the oven for a healthier version with less fat. It did work, kinda. The tortilla didn't get as browned/cooked as with frying in oil and a slight different flavor.......not bad at all, just different. I have not tried cooking them in an air fryer, so I have no idea if they'll work or not.


I haven't tried it, but I see no reason why corn tortillas couldn't be used, but would need to be well softened first by either steaming or heating in hot oil.

Prepare a couple cups of rice, when done and still hot stir in your favorite Cream Of Something soup. If needed warm a bit more while stirring. Scoop onto your plate and enjoy. I used to eat the entire dish by myself in my younger years but it could easily serve 2 or maybe 4 people. If you want a bit more filling add in a can of chicken meat or dice in left over chicken or turkey.
 
Mac and cheese with tuna and some peas, frozen or canned.
My brother had that recipe, he'd mix in a can of sour cream chips on top, it was yummy!

Oops, my mistake. I just found the actual recipe.......and it takes 15 minutes instead of 10


15-minute Chicken & Rice Dinner

1 Tbls oil
4 skinless boneless chicken breast halves (or can use about 2 C diced or cubed)
1 (10 3/4 ounces) Condensed Cream of Chicken Soup
1 1/2 C water
1/4 tsp paprika
1/4 tsp pepper
1 1/2 C uncooked Minute Rice
2 C fresh or frozen broccoli


1. In medium skillet over medium high heat, heat oil. Add chicken and cook 8 minutes or until browned (diced or cubed takes less time to cook). Set chicken aside. Pour off fat.

2. Add soup, water, paprika and pepper. Heat to a boil

3. Stir in rice and broccoli. Place chicken on rice mixture. Reduce heat to low. Cover and cook 5 minutes till chicken is no longer pink and rice is done.

Chicken Quesadillas

1 lb chicken breast, cubed
1 can (10 3/4 oz) condensed Cheddar Cheese Soup
1/2 C thick & chunky salsa or picante sauce
10 flour tortillas (8 inch)

1. Preheat oven to 425F

2. in medium skillet over medium high heat, cook chicken 5 minutes or until no longer pink and juices evaporate, stirring often. Add soup and salsa. Heat through, stirring occasionally

3. Place tortillas on 2 baking sheets. Top half of each tortilla with about 1/3 C soup mixture. Spread to within 1/2 of edge (of half the tortilla). Moisten edges with water. Fold over and seal edges together.

4. Bake 5 minutes or until hot & starting to brown.





Possible modifications........

I have used Fiesta Nacho soup (I think that's what it's called) and skipped the salsa, works just as good.

In these days of companies changing up their products, I don't know if you can even find any of the cheese soup anymore, but there's no reason why Queso dip or nacho cheese sauce wouldn't work

Or use salsa mixed with shredded cheese.

No reason other meats can't be used like beef or pork or even refried beans or a mix of your choice for filling. Just make sure it's kinda saucy creamy texture..


And you could just lay out the tortilla, top with mixture, spread out to within 1/2 inch of the edge, then top with another tortilla and seal the edges together and bake......then cut it into pieces.








I have a couple of the Campbells Soup recipe books that have loads of quick & easy meals, though they may take longer than 10 minutes,, but I don't think any of them would take hours. And many of them can be modified to fit with whatever you like or have on hand for substitutions if you don't have what the recipe calls for. I'll keep the books handy and post more recipes later..

Very similar but my recipe is strictly from what I had available in my cabinets one night when I came home from work very hungry. I called it Bachelor Slop. :ghostly:
 
I have yet to make it, but with my canned goods I have thought that a can of beef, a can or two of potatoes, a can of carrots, and or peas and some dried onions would make a quick stew. It could be served over rice or noodles as well. A can of cream of something soup could help. Heat until warm. As I have been storing cans of various foods, I often think of the meals and combinations I could make from the foods I have stored.

While I'm talking, I am thinking is there any favorite meal that you would consider canning to make a "quick" meal out of?
 
Try this:
Two turkey burgers, cooked and diced.
one can of chef Boyardee chicken Alfredo.
Italian seasoning and salt.
Nuke it, mix it, eat it. YUM!

Beef stew, chili, chicken and rice, sausages in tomato paste. my aunt has something made entirely of dehydrated ingredients similar to vegetable soup called "dinner in a can" that and the same jar full of water = dinner in a half an hour.

I've known other people who make their big pots of soup and then can them for meals. You have a great list. You could stretch them by adding rice or noodles. I make many of the same up, but freeze them in serving sizes.
We can some soups for use with egg noodles or rice, but that usually takes longer than 10 minutes to make, I was trying to limit my response to the scope of the topic, "10 minute 1 pan meals". On the ones with egg noodles we actually have 2 jars, one with the liquid soup and a vacuum packed jar of noodles to complete the meal, store them in the same flat....

We have a much longer list of more involved meals but they usually take 30 minutes or 2 pans...

To repeat myself, I just provided our 1 jar, 1 pan, 10 minutes and done list.
 
I've not done this, but I have heard that if you put the noodles in a jar raw, they soften as they absorb juice, then just warm it all up at once. Anybody know if its true? I'm not a canner.
 
I got one, sweet and sour chili!
Now hear me out, it was an accident, but it was pretty darn good!
1 can of white chicken chili. (I know right? but it was free.)
1 can of baked beans that has an almost identical label!
Curse and swear five minutes and decide to cook anyway.
1 heaping spoonful of jalapeno relish.
1 heaping spoonful of chow-chow.
Add crackers and eat, I swear this stuff was not half bad!
 
Looking thru the books, I can find easy recipes, but all take longer than 10 minutes. So I got nuttin for the required timeline. WAIT, maybe I do, but may take 2 pans.

Cooked macaroni
Can of stewed or diced tomatoes
Some kind of meat (cooked)......diced chicken, burger or even crumbled bacon.
Salt & pepper....and any other seasoning you'd prefer

mix it all together & heat thru



What about a crockpot? Do you have one? It may take hours, but just throw in the stuff in the morning, and it'll be done by suppertime. No fuss, no muss.
 
Spinach surprise.
1 can of seasoned Spinach with juices.
1 box of cornbread stuffing.
4 eggs.
mix well, allow the cornbread to absorb all the liquid.
Grill/fry dark brown 5 minutes per side.
Not bad for a goofball recipe! make a great side dish!

I'm thinking mac n mushrooms and kraut n wieners.

What about burger SOS?

Sliced bread or toast
burger
fat
flour
milk
salt & pepper
garlic powder and/or bullion powder

Brown the burger with some salt & pepper, garlic or bullion powder, make sure there's 2 or 3 tablespoons of fat in the pan.....probably from the burger, but you can add a bit as well. Add enough flour to soak up all the fat and sticks to the meat and the pan is nearly dry. Cook for a couple minutes to lightly brown the flour mix. Then start adding milk, about 1/2 cup at a time and whisk. At first the roux will soak up all the milk and can become like a blob, Just add a bit more milk at a time while whisking it, until the gravy is as thick or thin as you like. If you need too, pull the pan off the heat during the process to help smooth it out. Serve over bread, toast or biscuits
 
Ever try turkey burger? hit it with the sage and red pepper and it tastes like pork sausage!


Then you can make sausage gravy & biscuits.....pretty much the same as the SOS, just different meat and/or seasonings
 
bingo! it works with regular burgers too.

One of my all time favorite sandwiches is a patty of beef, fried with a patty of sausage with an egg and cheese on a croissant roll.
 
I shared this recipe on the thread, "Prepping for Pizza" for copycat Taco Bell's Mexican Pizza. I've got some of the ingredients to make it: tortillas, refried beans, taco meat (ground beef with taco seasoning, or you can use other meat seasoned with taco seasoning), grated cheese, lettuce, black olives. The recipe suggests you brown the tortillas in a frying pan, assemble them and then put them in the oven. I've been making them in a frying pan on the stove top on very low heat. I've put a tortilla in, then some refried beans spread across the top, a couple spoons full of taco meat, some shredded cheese across the top. That is all I've been putting in it. Then I cover the pan, turn the heat on low and watch it closely until the cheese melts. I don't always follow recipes 100%, and I know you can change this up as you want it. Serve it with salsa, chopped lettuce, tomato, black olives, sour cream, guacamole, whatever you have or want on it.

I also make up taco meat and keep it in the fridge for a couple days, then divide it into serving sizes and freeze it if I haven't used it all. It makes it easy to pull out a serving size to make one serving.

Place on a rimmed baking sheet. Repeat building process with remaining ingredients to make 6 pizzas. Place baking sheet in center of oven, and broil 1 to 2 minutes until cheese is melted. Let stand 3 minutes before cutting into quarters.

Spinach patties:
1 box of cornbread stove-top dressing.
1 can of Popeye Spinach.
4 eggs.
A tiny bit of shredded onion.
Mix well and make patties, fry in butter until well browned, lightly dust with grated Parmesan cheese. serve with mayonnaise dressing.

As a side, serve tomato quarters and creamed corn. Yummy vegan dinner.
