I need help. Tonight, I made salmon patties for the first time. I used my air fryer.
They browned up nice… The problem wasn’t the air fryer, it was the recipe.

(1/4 cup of chopped onions, 1/2 cup of bread crumbs, a little salt and pepper, 1/2 teaspoon of Worcestershire sauce and a beaten egg, mix together. Afterwards add a 14.75 ounce can of salmon... remove the bones and skin before adding to the mix and making the patties... I used Olive Oil spray on the air fryer rack an the patties)

It was the blandest, Sahara Desert dry, nothing I’ve ever eaten. They didn't even taste like salmon. I’m going to give the dog the 4 patties I didn’t eat. That was a waste of $4.35 for a can of salmon. I thought I could get 2 meals out of it.

You ladies have a better recipe or technique? I have another can of salmon.

Don't drain it until it's dry. I do remove the skin but leave some of the backbone in it, mashing it up. I skip the onion.
My recipe, as far as I remember and verified:
4-5 saltines, crumbled, OR 2 slices of toast, torn up in small pieces
2 eggs
1/2 tsp. mustard
Add dill or Old Bay or Mrs. Dash or nothing
I don't use an air fryer. Broil or pan fry in butter. I can't eat eggs outright, but I can eat them in this form.
Ours are usually very good. Maybe it was just that you used the air fryer. I don't know.
I've also made them with a similar recipe, only in little muffin cups. That is delicious. We use cocktail sauce too.
 
I'd say it's the air dryer too. Plus I use 2 eggs and make sure grease is hot before putting them in the pan. I don't add oil to recipe just eggs, onions,saltines. I always leave bone in but do clean off some skin.
 
Meat dries out unless the outside is braised when cooked. I always brown the meat before baking it so the juices stay inside.
 
I always use Old Bay when I do anything with seafood. Always.
The recipe I use is almost exactly like yours @Peanut. But I do add 2 cloves of garlic minced and the Old Bay and I fry mine in a skillet with olive oil
If you don't have or like Old Bay I've found thyme or dill is good on seafood

*just a note* Old Bay can be a bit strong for some people. I don't get heavy handed with it myself but I know others do. Its a matter of taste
 
I know air fryers don't need oil but if you spray a little oil on the food it cooks better.
My wife made pork chops in the air fryer with no oil and I fed them to the dogs.
My Grandma made the best fish patties.
She used salmon sometimes but mostly she used mackerel.
Egg, flour, salt and pepper and fried them in bacon grease.
 
I'm not a lady and the last time anyone called me a gentleman my mom was trying to get me to behave at a function but I hope this helps.

I'd loose the bug juice and the air fryer. Remember that the salmon was cooked in the can so you just need to brown it and warm it.

I'd add mayo to moisten it and flavour it. I like old bay or garlic but those are optional and to taste. A dash of lemon might do well.

My favourite way to cook salmon is to take a fillet and lay it skin down, a little lemon juice, sprinkle it with garlic, sometimes a thin layer of sliced onion, smear with mayo and bake until it flakes. It is very easy to overcook fish. this works well with halibut also.
 
I haven't made salmon patties very often in my life, so I would have to search for a recipe.

I think I have told this before, but once I was a guest at someone's home for lunch and we had salmon patties that were delicious. They had mashed potatoes and creamed peas that were used as a gravy over the patties and potatoes. I had never seen or had that before, and whenever I have made salmon patties, I have always made creamed peas to go with them.
 
@Peanut the crackers get crushed, crumbled, add them a bit at a time, mixing as you go. Actually the mix ends up being almost too moist and it is hard to keep the patties in good form. Broiling them would probably help out with that.
Mustard, like what you use on a sandwich, not dry mustard.
 
I cook garlic, onion & bell pepper in a little butter then add in my salmon or tuna to flake. Turn off heat. Throw in a couple pinches of thyme or dill. Add in some heavy whipping cream or even just milk. A little Worcestershire, then enough bread crumbs to hold together or to stretch it out more can be added. Then season with what you like. Salt & pepper or Old Bay is good. Let cool enough to handle to form into patties. I fry mine in a little bacon fat in a cast iron skillet. Sorry I don't do measurements.
 
Tonight I though I’d have a go at the patties again. I found another recipe on the net. Instead of onion it called for green onion. I’m very fond of green onion anyway. It also called for the juice of one lime. I didn’t a lime but I did have a small bottle of “Real Lime Juice”. I sprinkled in about a tsp. I fried them up in a cast iron skillet.

I forgot about the old bay until afterward but I gave them a dusting anyway.

They were yummy! ;)

I think it was the air fryer that dried the first batch out.
 
Salmon
Mashed potatoes cold
Sweet corn
Green and red bell pepper
Sweet onion
Salt pepper
Garlic and herbs seasoning
Flower
Bread crumbs

Mix all the ingredients except the flower and bread crumbs together use twice as much fish as potatoes make a ball and on a plate mix your flower and bread crumbs together place one ball at a time on the plate and push down making a Patty flip and do the other side that way set in a hot frying pan of olive oil letinle it cover just under have the Patty when firm flip only do two at a time when the other side is firm place on a plate with paper towel to drain. You can make crab Patty's the same way.

Make honey and yellow mustard dip

Honey
Yellow mustard
Garlic salt
Mix together
Dip Patty's into t
It

Honey ham wrapped asparagus
Thin cut honey ham
Fresh asparagus
Take 3 asparagus and wrap The Honey Ham around it
Place in hot olive oil until the honey ham was Krispy and then take out
Serve with salmon patties
