Havent i posted this before? I dunno.

For my crowd I use 2 or 3 cans, but let's pretend it's only for 2 or 3 people who aren't big eaters. Ingredients vary.
1 can or 2 cups cooked, rinsed, drained, black beans
Optional can or half can of corn
1/4 of a red or green bell pepper
1/2 can black olives (or not)
Chopped tomatoes (I use the small or grape tomatoes)
Cucumbers (small ones, 1 or 2) cut however you want, peeled or not
1/2 avocado or less
Dressing: 1 lime, 1/4- 1/3 cup of extra virgin olive oil, fresh cilantro chopped (as much as you want)
I love this. I make another salad with garbanzo beans replacing the black, basil or dill replacing the cilantro.
Thank you. I make a very similar salad, and it varies depending upon what I have available. I call it Southwestern salad or Southwestern corn salad. I use more corn and usually use frozen or fresh corn that I cut off the cob.
 
I baked some chicken breasts and made 2 extra for potpie later this week. made scalloped potatoes and green beans to with it
 
leftovers or whatever needs used up.
Supper last night was from Sonic compliments of oldest son.
Got couple pounds of sliced ham to do something with.
Might make rollups with at least part of it.
Piece of sliced ham, slap on some spicy brown mustard, cheese stick in center, orange, coffee.
Simple but filling.
I wonder if you can freeze rollups? Might have to try and see.
 
Not lazy, just plum-tuckered out. I always love taters, precious, but I also do not want to cook. Hmmm, what to do about dinner, oh @Terri9630 ?
Peanut butter and jelly is starting to sound good.......
