    we only use 2 local butchers, one in the market and one in a farm shop in another town, owner of the farm shop went to school with wife's daughter. both butchers are reliable and trust worthy.

    Butchers have gotten too expensive to settle for shoddy work. Around me, to have your deer processed is $250 minimum, and you won't get your own meat back if you take it in during the height of the season. That's a lot to pay for 40 pounds of meat that might be from a stringy old doe...
