It has to be what gives purple sting beans their color. They turn green when cooked. Dad grew them for years.

its the reason the red fleshed apples skillcult breeds taste like berry's and watermelons so much. some taste like a bag of jolly ranchers. its the red anthocyanin color.

the bronze beauty lettuce i grow gets solid purple/red when weather gets colder. it prevents freezing as well.
