Just like making apple or pear nectar only you boil more of the water off.
If you let the juice ferment you get a good wine or you can distill the wine for liqueur or rum depending on the finished proof.
 
I've made apple, blueberry and pear syrup and tried to make cherry syrup but it takes a lot more cherries than other fruits.
