Cana is blooming, a starchy root that was a staple of native peoples on Caribbean islands. Its related to ginger and bananas. Root harvest time is before the plant puts on flowers. The leaves can be used to cook food in. The young shoots can be eaten as a vegetable in early spring.

The linked article is very informative. I think if I were starving it wouldn't matter when the root is harvested.
