Chocolate Mayonnaise Cake
3 cups unsifted flour
1-1/2 cups sugar
1/3 cup cocoa
2-1/4 teaspoons baking powder
1-1/2 teaspoons baking soda
1-1/2 cups mayonnaise
1-1/2 cups of water
1-1/2 teaspoons vanilla

Grease two 9 x 1-1/2 inch pans
Line the bottoms with wax paper
Sift all the dry ingredients together in a large bowl
Stir in the mayonnaise
Gradually stir in the water and vanilla until smooth
Pour into pans
Bake at 350-degrees for 30 minutes or until cake tests done
Cool, remove from pans
Makes 2 layers
 
I once was at a persons apartment that I was dating and while she was in the shower I decided to surprise her with pancakes. Looked and there were no eggs so I substituted Mayo. She never knew! :)
