Can it be dried out somehow after it starts to clump up?
I am often amazed at the wealth of knowledge assembled at this site.Citric acid is hygroscopic.
Heat to 190F (for several hours) - it will give off the water it has absorbed over time.
The decomposition temperature of Citric acid is about 350F - so it won't decompose while you are drying it at 190F.
Correct.Nice! So it won't melt or anything.
