Citric acid?

Citric acid is hygroscopic.

Heat to 190F (for several hours) - it will give off the water it has absorbed over time.

The decomposition temperature of Citric acid is about 350F - so it won't decompose while you are drying it at 190F.
I am often amazed at the wealth of knowledge assembled at this site.
 
You can buy the lemon flavored stuff at the liquor store for a buck an ounce. there is lime and spicy as well.

How do you tell if citric acid is lemon flavored anyway? LOL
 
Exactly. I have a jar thats gone to pellets on me, thats why I made the post.
