I’ve been learning some of the uses of corn starch the last few months, especially with Asian cooking.

I did something the other day I’ve never read about. I was making a single serving of home fries for breakfast. I sweat some onions in a different skillet with fresh garlic and add them back in on the plate. I make pretty good home fries if I do say so myself.

That morning there was a container of corn starch on the kitchen counter that didn’t get put away the night before.

After I par-boiled my potatoes I had them draining in a tiny colander. For some reason I took a few pinches of corn starch and sprinkled it over my potatoes then tossed them in a small skillet to fry with bacon grease.

Without a doubt they were the best home fries I’ve ever made. They had nice crunchy spots all over them and the insides were soft potatoey goodness.

Anyone tried this? Or have other uses not found in a cookbook? :)

Next time I fry squash they are getting some corn starch too!
