Has anyone ever had success slicing and freezing eggplant. I have a few too many that need pick. It's just my daughter and I. I already gave 2 awsy. Have 3 or 4 more ready...
Not sure but maybe somebody will come along and answer that question.
If it were me I'd just cut it how I wanted and freeze it, I never pre-boil any of my veggies.
I just don't let them thaw before cooking. I do turnips, squash and it is always fine.
