I really like cauliflower rice. I hadn't had it until a couple of months ago.
I do too. It works really great in most recipes. I actually used it as the base to make our "dressing" at thanksgiving instead of bread. It was really good.
 
I made a new recipe for breakfast. It was pretty good. I forgot to take a picture but here is the recipe.

Spaghetti Squash Porridge

1.5 cups cooked spaghetti squash
1 cup of almond milk (I used vanilla unsweetened but you can use whatever you prefer.)
1/2 cup unsweetened coconut flakes
1 medium apple
Pinch of salt
Cinnamon, nutmeg, etc to taste.

Put all ingredients in a pot and bring to a boil. Reduce heat and simmer 8-10 minutes. Divide into bowls and enjoy.

This makes 3 servings for me but may be 1 or 2 for depending on your needs.

This would be good with other nuts sprinkled on top. Banana instead of apple. Some dried fruit or maple syrup. Anything you like in your oatmeal.
 
I'm making Italian Vegetable Soup today. I'll let you know how it turns out. Here is the before pic plus onion and garlic. I'll serve it over seasoned ground beef for a complete meal. ;)View attachment 3676
This soup turned out really good. It was even better the next day. I will definitely make it again.
 
This week's soup is a lovely Winter Vegeable soul with lots of warming spices. That and homemade chai are really nicw.on this cold winter day.

Simple Chicken Curry
8 Chicken thighs cooked in 2tbs Olive Oil. Then remove and cube.
1 Large Onion chopped and sautéed.
Add
3 small Zucchini thick cut.
5 Cloves Garlic chopped.
1 tbs Curry.
1/2 tsp Paprika.
2 tsp Salt.
2 cans Coconut Milk.
1 cup chopped Tomatoes
Bring to boil and cook 30 min.

Naan Bread
1/2 cup Almond Flour
1/2 cup Tapioca Flour
1 can Coconut milk
Mix to the consistency of pancake mix. Use a nonstick skillet no oil.

Dinner tonight is cauliflower tabbouleh and meatballs with tahini dressing, BDTs naan bread and a little dried fruit.

Blueberry Banana Bread

2 Banana
2 Egg
1/4 cup Coconut Oil
2 cups Almond Flower
1 tsp Baking Powder
1/4 tsp Salt
1 cups Chopped Nuts
2 cups fresh or dried Fruit
2 tbs Flax Seed
350 for 40 Min.
 
We usually have a big salad for dinner with either grilled chicken or shrimp but it's cold and damp here today so I wanted something warm and comforting. I decided that we would have Beef & Gravy on (cauliflower) Rice from Well Fed 2. So yummy. Here is the recipe with my modifications.

1 batch of cooked cauliflower rice
1 pound of ground beef
1 tbls olive oil
1/4 cup of finely chopped onion
2 cloves garlic
1 cup bone broth
3 tbls potato starch
1 tsp salt
1/2 tsp black pepper
1/4 tsp dried thyme
1 tsp cocout aminos

Heat olive oil over med high heat. Add onion and cook until traslucent.

Add beef and garlic and cook until most of the pink is gone.

Mix potato starch, salt, pepper and thyme in a small bowl. Add to beef mixture and stir to combine.

Add bone broth and coconut aminos. Cook until thickened. (This will be quick)

Top rice with beef and Gravy and sprinkle with parsley.

Enjoy!

We have made this for years over toast, pasta and rice. I think I really like this better!
 
Miss Donna I know you have your own garden but. With all the E. coli etc. what do you wash your vegetables in-with?

Green Tocos

Split Bell Peppers and clean.
Cook Hamburger and drain.
Add Toco seasonings.
Stuff Peppers.
Bake 30 min @ 350.
Layer with Avacado.
Smother with Pico De gallo.

Today I made this sweet and savory chicken in the slow cooker.
I omitted the potatoes, and served it over steamed vegetables (cauliflower, broccoli, and carrots). It turned out delicious!
