I gave some of this to a die-hard fan of fudge and he could not believe it was made with black beans and wanted more...and more. Here's my recipe:
Black Bean Fudge
1 3/4 cups cooked black beans (or 1 can, drained and rinsed)
2 tablespoons coconut oil, melted
1/2 cocoa (or cacao) powder, your choice
1/4 almond or peanut butter
1/2 cup packed pitted dates
2 teaspoons vanilla
pinch of salt
Notes: I sometimes throw in a little coconut sugar or stevia powder to sweeten it just a little bit more for the sweet-tooth lovers. Also, "Dutch processed" cocoa powder is a little less bitter than "regular" cocoa.
- Process all ingredients in a food processor using an "S" shaped blade.
- Pat down on parchment paper, forming a rectangle or square. If desired, add nuts, coconut flakes when patting the mixture down on the paper.
- Refrigerate before cutting.
This stuff may help save your sanity after the SHTF!
No electricity to power a food processor? Use a hand cranked food processor or else chop, chop, chop and smash, smash, smash the old-fashioned way. Good wintertime recipe, or else just spoon this wonderful stuff straight out of the bowl.
All ingredients can be stored for a reasonable length of time. Dates do have a limited life span. This article sums up pretty much what I have found in my own research.

I have not yet made this with date sugar or honey, but will try it out. Honey lasts nearly forever.
