Caribou, how did it taste?
DW recipe calls for 5-10 days.
It tasted great but it has been 20 years so my memory on how it was done is not reliable. I never did beef but only corned moose and caribou.

The above video says 10 days so that is probably right. I also canned my corned, um, moose. the trick to warming canned corned beef is to boil it, otherwise it is too salty.

I like the ideal that corned beef/meat brine will keep meat without freezing for forty days & nights.
No way a person could feed a family of 4 or 6 on a steer or moose without some of the meat soiling.
