Krusteaz pancake mix

We found we don't like this after buying a large bag. Searching the net for other uses only brings up recipes for their baking mixes. Does anyone have any idea what it can be used for other than pancakes?
Cut the water, add beer and cook up some fish.
 
Wife just started using this mix and has just used up her first box making pancakes. We like them better than using bisquick, which she's used for years. last batch we put chopped up strawberries in the batter after dropping it on the skillet. We like ours with butter and cool whip on ours, or some good maple syrup. pineapple and blueberries make a great topping as well.

Cinnamon Sugar Roll-up

Ingredients
2 cups Krusteaz Buttermilk Pancake Mix

1 1/3 cups cold water

1/2 cup sugar

1 teaspoon cinnamon

Melted butter


  1. // Heat pancake griddle to 375°F (medium heat). Lightly grease griddle.
  2. // Stir Krusteaz Buttermilk Pancake Mix, water, together with a wire whisk. Batter will be slightly lumpy. (Do not over mix). Pour slightly less than 1/4 cup batter per pancake onto griddle. Cook pancakes 1 1/4 minutes per side, or until golden brown, turning only once.
  3. // To assemble: Preheat oven to 350°F. Combine sugar and cinnamon. Brush pancakes on both sides with butter and sprinkle with cinnamon sugar. Fold pancake in half and roll into a crescent. Place pancake in paper-lined muffin cups. Bake 13-15 minutes or until crispy. Makes 13-14 servings.
 
Churros



Ingredients:
Dough:
1 cup water
1 cup pancake mix
2 tbsp butter
1 tsp sugar

Cinnamon Sugar:
1/2 cup white sugar
1 1/2 tsp cinnamon

Directions:
Combine water and butter in a saucepan and bring it to a boil. Once boiled, remove the saucepan from heat and add pancake mix and 1 tsp of sugar. Stir until it forms into a smooth dough.

Pour cooking oil on a frying pan and set the stove to medium-high (around 375 F). With a pastry bag, pipe the dough to about 5-6 inches long and fry until golden brown. Set them on a plate with layers of paper towel to absorb the oil.

Combine 1/2 cup of white sugar and 1 1/2 tsp cinnamon in a bowl. Roll the churros in cinnamon sugar until the whole surface is covered.

Serve and enjoy!
 
Strawberry Banana Bread

Servings: 8-10 pieces

Ingredients
2 large eggs
1/4 cup water
1 medium brown-spotted banana, mashed
2 teaspoons vanilla extract, divided
1/2 cup vegetable oil
1/3 cup granulated sugar
2 cups Krusteaz Buttermilk Pancake Mix
1 cup strawberries, chopped
3/4 cup powdered sugar
1/8 teaspoon strawberry extract
2-3 tablespoons heavy whipping cream
1-2 drops red food coloring, optional

Directions:
Preheat oven to 350°F. Spray an 8x4 inch loaf pan with nonstick cooking spray.

Place eggs, water, banana, and 1 teaspoon vanilla extract in a blender and blend until smooth. Stir together oil and sugar in a large bowl. Add banana mixture and the pancake mix and stir until combined (batter may be slightly lumpy). Stir in chopped strawberries.

Pour batter into prepared pan. Bake 30-40 minutes, until golden brown and a toothpick comes out clean. Cool completely before frosting.

To make frosting: whisk together powdered sugar, remaining 1 teaspoon vanilla extract, strawberry extract and 1 tablespoon heavy whipping cream until a thick glaze forms. Add another tablespoon of heavy whipping cream and whisk until smooth, adding more as needed for desired consistency. Stir in red food coloring, if desired. Frost cooled bread and slice to serve.
 
Krusteaz buttermilk pancake mix was a staple in our back-packs. Pick some blueberries and mix it all up cook and put honey on top. It is a good way to get your day started when walking through the wilderness areas of Washington state. At home you put in 1/4 cup of veggie oil and make waffles. Adding fruit and berries is good! I also like it plain or if you want it richer use milk or cream instead of water. It doesn't make good biscuits by itself but you can dress it up a bit and add baking powder and it is fair. I haven't used it in years because I started making everything from scratch and sourdough. It stores forever!
 
You can make fritters with pancake mix. Just make up your batter and add whatever veggies/meat you have. You can do the same thing with leftover mashed potatoes. Thin the potatoes a little and mix your vegetables into the potatoes, make some patties and lightly flour them on both sides and fry. My mother did that all the time with our leftovers when I was growing up. Back then we didn't have pancake mix, though, and she just mixed up her batter from scratch. Corn cakes were my favorite.
