I’ve always heard 2 years but have eaten older like AH said as long as it was done right and kept properly. I still have 2 jars of spaghetti sauce w/ meat that is 3-4 years. I don’t usually have canned goods that long, but it got “missed” so now we’re taking care of it.

As long as the seal is good the food is good. There have been documented cases of canned goods being edible after over 100 years. Personally, I ate some home canned salmon of mine that was forgotten on a bottom shelf for 20 years. Only problem is I only had one jar, it was smoked salmon and a pretty good batch, if I do say so myself.
Edit: Put this somewhere else recently but it fits here.
