Need mini muffin pan
Preheat 400 degrees
Cook 15 minutes

This makes 48 mini muffins

2- cups hungry man pancake mix
1 1/2 cup water
Mix
Add
1 lb cooked, crumbled, drained, sausage
1 cup shredded cheese
1/4 cup maple syrup
Mix all and put into a muffin pan.
 
Do they have to be mini muffins? I would probably opt for regular size muffins, and just see how many this batch size makes. The recipe sounds great. I will definitely give it a try.

Heck no, I see no reason the size would make a difference. Just keep an eye on them And you should be fine
 
I'm going to try this in a corn log pan!

Have you ever seen these cast iron cornbread pans that look like ears of corn?
 
The cooking time might need to be slightly longer.
That was the only thing I could think of using the bigger muffin pans..
I've had a couple ...good ideas.. that I couldn't get done in the middle turn to failures...

Please be sure to post results.... With a picture....

I could never get a corn cob corn bread pan seasoned correctly enough to release well... Everything always turned to crumbles and had to be dug out with a fork.. Having to eat the corn bread with a spoon..

How to season a used ci muffin skillet

Use a 4.5 “ grinder with a wire wheel
Take the cast down to metal

Pre-heat oven 400 degrees
Using crisco
Slather it on and put in the oven for 1 hour
Remove and let cool
Do it again. Repeat 3 times

Here is the most important bit of advice
The skillet is seasoned. When used Do Not Wash. wipe it out with a moist paper towel. If you fo eash, then you must. Reseason, detergent and hot water removes the seasoning

Tip on making corn bread.
Your recipe calls for some oil.
Preheat oven put the oil in. Your dkillet
And let bring the skillet up to cooking temp. Pour the hot great into your batter
