2 pounds bulk sausage
couple cups cheese
cup diced pepperoni

OK....What you put inside this is really up to you
ANYTHINg can be wrapped up.

put the sausage in a 1 gallon zip lock. flatten out
cut away te zip lock..It was just a form
add your goodies
roll the sausage up. wrap with bacon
put in your smoker for 2 hours

Good stuff. We make something like that regularly, only sans the pepperoni. We generally use ground beef mixed somewhat like "meatloaf" and stuff it with pepper rings, jalapeno slices, grilled onions, and pepper jack cheese.
 
I gotta tell ya, that looks pretty darn good, I'm a fan of pepperoni so all the better. I bet Chorizo would be good in that too.
