Also known as Jerusalem Artichoke roots make a wonderful pickle. You need to soak in salt water (one change mid week) to get the "farts" out. Before putting them in your pickling solution.
 
I had it, second year the wild deer eat it to the ground, it never got more than a few inches high. Yes, they killed it dead.
 
Never eaten one. if its as bad as a turnip, I'll pass.
