Swiss style potato soup

4-6 small potatoes
1 Tablespoon of butter
4 green onions sliced
2 sprigs of parsley chopped fine
1 cup of Swiss cheese cubed
1 can evaporated milk
1/4 Teaspoon of salt

Boil potatoes until tender, drain and reserve 1/2 cup of the water
Cube potatoes
Saute the onions in the butter
Add the rest of the ingredients
Heat on low until cheese is melted and is heated through
Makes 4 servings



*My notes*
I save the extra water from the potatoes to use in making bread
I cube the potatoes before boiling
I grate the cheese instead of cube it
I add a dash of pepper to the soup while its heating and once in a while I'll add a pinch of dill to it
