How bout some good old pickled pig feet ?

My Czech grandmother and her sisters made pickled pig feet for special holiday meals. Of course, theirs did not come in a jar. They would cook raw pigs feet or hocks in a pot with some water, vinegar and pickling spices until they were tender. They take several hours to simmer to be tender. Then they would cool them down, cut all the skin, fat and meat off the bone. Bone went in the trash, the rest into a rectangular baking pan. Liquid from cooking was poured over the top. Pan went into the fridge until it had gelatinized. Fat was skimmed off the top. It was cut in pieces, like cake, and served, sometimes in a sauce dish, sometimes on our plates. A little apple cider vinegar was poured over the top before eating. YUM! We had this for Thanksgiving, Christmas, New Years, Easter, and any other meal that was special. I have made them a few times, but mine are not nearly as good as my great aunts and Grandmother's.
 
I love greenbean casserole, always at our tables... Another biggy is fried okra. My mom fries okra until it's almost done then freezes it. For special occasions or anytime... thaw, finish frying and serve. Okra does well being frozen and thawed.

And gravy, boat loads of gravy (pardon the pun). We have turkey of course but both city ham and country ham, dinner rolls and someone always makes a big batch of cat head biscuits. Frozen sweet corn from the garden makes an appearance, both creamed and whole kernel. There is always a big pot of chicken & dumplings somewhere and pies... pies, cakes and cookies everywhere.

Darn... I'm getting hungry tonight just writing some of it down. :)
 
I just went back and read this thread... I miss VenomJockey, Cnsper and Sentry...

I happened to think of my aunt E's dressing when I was a kid. The kids hated it, only 2 or 3 of the adults would eat it. She put so much sage in her dressing it'd melt your nose hairs! It was awful!

Thankfully several people would also bring dressing so we weren't all stuck eating sage brush pie. But it seemed that an adult fixing my plate would always give me some of Aunt E's. Luckily the kids table was in a corner by the door. I usually managed to fling it to a dog outside.

Funny, one year while trying fling it, I accidentally dropped the dressing in uncle Billy's boots which were by the door. (that's a whole other story 😁)

So, I love dressing and aunt E, but not her dressing. May she rest in peace. (and her dressing)

@phideaux Hey Jim, I notice no one guessed what this is! I remember making it in a huge cast iron pot in the yard. Never liked it but will eat it.

Is that hominy? I like it in a soup, some shredded pork, broth, and good seasonings.
Least popular at our house is canned cranberry sauce. I make my own chunky stuff with fresh cranberries.
I used to love green bean casserole, but don't like it much anymore. Cousin Wanda is bringing that and the kids will eat it. Mom usually likes it but won't eat it because Wanda made it.

I love hash browns and hash brown casserole 😋

Ok. I don't know what hash brown casserole is, but I'm thinking it is the same as our "cheesy potatoes" where we mix two bags of frozen hash browns, add a bag of shredded cheese, a can of diced green chillies, and top with shredded onion rings or corn flakes?
 
This may open a can of worms, no pun intended, but my least favorite Thanksgiving food is sweet potatoes. I know. A lot of people love them, and every variation of them, but they are not my cup of tea. I could eat one if I had to, and it would stay down, but they are definitely my least favorite Thanksgiving food.

I agree completely, not in my top 100 either. I'll eat them baked with butter but that's it. Sweet potato pie... sacrilege! Pies have meat or fruit, not potatoes! Someone dreamed up a way to torture children, put potatoes in a pie! I'd rather have a regular mashed potato sandwich!

Even worse are little marshmallows some people put on them. I don't know what I despise more the sweet potato pie or the little marshmallows! Not overly fond of pumpkin pie either for the same reasons.

Looking back, maybe my aunt E made the sweet potato pies. Bet she used sage. 🤣

It’s odd, as I love the wild low bush and high bush cranberries that are abundant in my parts, I never touch the cranberry concoction typically served at Thanksgiving. Hands down my least favorite.

Me too! Although, I had one sprinkled with cinnamon and it was like a desert and was probably the best I've had them. Way too sweet for me. Oh yea, and adding marshmallows make them even worse.
Right there with that mess is that jello/cool whip stuff - blek! That's like sugar mush.

My hash brown casserole is different every time I make it! Kind of an anything goes thing!!🥔🥔🧀
