A Reuben sandwich with fries is as close as I will get to Corn beef and cabbage.
Even that will be two to three meals

For a fast food place, Culvers makes a good Reuben.. Kind of pricy, but good 1-2 times a year..

But there is local Mom and Pop cafe that make supreme Reuben sandwich and Waffle fries for $7.96.
 
I figure everyone is Irish on St. Patrick's Day...just like everyone can celebrate Cinco de Mayo. Never turn down an excuse for a celebration.
If we celebrate every battle the French lost we’d be happy all year long.

A bottle of Jameson should do the trick. I don’t want to make a big meal and have a bunch of leftovers.
 
It seem my local Wal*Mart has corned beef on sale for less than $5.
It's about 2.57 pounds on sale for $5.
Corned beef normally here is $20 or higher.
I do believe I will have to get me several for future meals.
That's kinda hard to pass up.
Lord have mercy I will have to make room in my chest freezer again.
Cherry pie filling to can up is in my future.

While corned beef can be higher priced other times of the year, like most things, the sales the week before are usually great. Isn't it the same with turkeys at Thanksgiving and ham at Christmas and Easter?
 
The short video says the 4 leaf clover represents the holy trinity and rebirth.... I guess that was an important part of the combination at that time...

It has been about 10(?) years since I've had a good proper corned beef dinner.. Looking forward to it..

I couldn't find a video of him making a Rueben but this is from Pioneer Woman's site. I did buy a loaf of rye bread, some Swiss cheese, and all the other ingredients for making Rueben sandwiches a couple months ago. I need to find some rye bread to make sandwiches next week.

So where did this bit of culinary perfection originate? The history has actually been debated for years! While many believe this delicious sandwich has Irish or German roots, its origin lies a little closer to home. Most signs point to a poker game at the Blackstone Hotel in the 1920s in Omaha, Nebraska, where a man by the name of Bernard Schimmel, who oversaw the kitchen, is believed to have assembled this hot-pressed sandwich—corned beef, Swiss cheese, sauerkraut and Russian dressing on rye—for a player by the name of Reuben Kulakofsky, who loved it. Kulakofsky's family maintains that Schimmel merely brought down a deli platter to the game, before Reuben himself assembled the beloved sandwich, but Schimmel's family has cleverly raised the question of why a panini maker would be present at that fabled poker game. The rest, as they say, is hotly contested history.
What's on a classic Reuben sandwich?
It's a pretty simple formula: You just build a sandwich on rye bread with corned beef, Swiss cheese, sauerkraut, and Russian dressing, then cook it in a skillet or on a griddle like a grilled cheese sandwich.
Is a Reuben sandwich made with pastrami or corned beef?
A classic Reuben sandwich is made with corned beef—not to be confused with pastrami. So, pastrami vs. corned beef: what's difference? Both kinds of meat are cured, but pastrami is then coated with a flavorful spice rub and smoked.
Why is my Reuben sandwich soggy?
The culprit is most likely the sauerkraut. Be sure to drain off as much liquid as possible from the sauerkraut before piling it onto your Reuben sandwich to prevent any sogginess. It's also best to serve Reubens soon after griddling to keep the toasted bread nice and crisp.
What can I use instead of Swiss cheese on a Reuben sandwich?
Swiss is classic, but if you're not a fan or just want to use what's already in your refrigerator, mild, melty cheeses like provolone or mozzarella are tasty swaps.
 
From what I have seen, the corned beef is typically sliced fairly thin for sandwiches.

Reuben Sandwich
A Reuben sandwich is one of my family's fix-it-quick favorites. They are really delicious and easy to make. I like to serve them with big bowls of steaming vegetable soup and dill pickles on the side.

Total Time: 20 mins
Servings: 4
Yield: 4 sandwiches

Ingredients​

  • 8 slices rye bread
  • ½ cup Thousand Island dressing
  • 8 slices Swiss cheese
  • 8 slices deli sliced corned beef
  • 1 cup sauerkraut, drained
  • 2 tablespoons butter, softened

Directions​

  1. Gather all ingredients and preheat a large griddle or skillet over medium heat.

  2. Spread one side of bread slices evenly with Thousand Island dressing.

  3. On four bread slices, layer one slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut, and a second slice of Swiss cheese. Top with remaining bread slices, dressing-side down. Butter the top of each sandwich.

  4. Place sandwiches, butter-side down on the preheated griddle; butter the top of each sandwich with remaining butter. Grill until both sides are golden brown, about 5 minutes per side.

  5. Serve hot. Enjoy!

Most Wal*Mart's start marking down Turkeys a day after Thanksgiving.
Same with hams after Christmas.
I had purchased 2 hams after Christmas for less than $15 together.
But before Christmas that would have been the cost of 1.
Yesterday, they had brought hams to fill the empty bunkers.
But still had empty gaps in the bunkers.
Hope to pick up several more hams after Easter.
Lamb will be popular for Easter too.
 
Well, I spent 4 hours in the kitchen this morning! Was sipping a little Baileys while cooking ...

The Shepherds Pie is completely assembled and in the baking dish - ready to bake, and my cupcakes are cooked and frosted - never made them before - but they have Baileys in the frosting!!). I cheated a bit with the veggies in the Shepherds Pie - used mixed veggies, which included green beans - hope it's not a sacrilege!! There's 21 freakin ingredients in it!!!

Also washed, dried, and put away all the pots, pans, and dishes I used along the way. Now I'm exhausted.

It had better taste amazing!!

Shepherds Pie

Ingredients:


2 lbs Russet Potatoes - peeled
2 lbs lean Ground Beef
1 cup Corn
1 cup Peas
1 cup Carrots
1 medium Yellow Onion - chopped
2 tbl fresh Parsley - chopped
3 cloves Garlic – chopped
2 tsp fresh Rosemary – chopped
2 tsp fresh Thyme – chopped
4 tbl Unsalted Butter
2/3 cup Half & Half
1 cup Low Sodium Beef Broth
½ cup Dry Red Wine
3 tbl Tomato Paste
1 tbl Canola Oil
3 tbl Worcestershire Sauce
3 tbl Flour
3 tbl grated Parmesan Cheese
Salt
Pepper

Step 1:

In medium saucepan or pot, cover potatoes with water by ½”
Season with salt
Boil over high heat until fork tender – 15 mins
Drain and set aside in colander

Step 2:

In the same pot, over medium heat, cook Half & Half and butter, stirring until butter is melted
Return potatoes to the pot.
Mash the potatoes
Stir in 1 tbl Parsley
Season with salt and pepper
Remove from heat

Step 3:

In a large skillet over medium high heat, heat Canola Oil.
Add the ground beef
Season with 2 tsp salt and ½ tsp pepper
Break up beef and cook until crumbled and no longer pink, 6-8 mins
Transfer beef to a bowl or plate using a slotted spoon.
Discard all but 2 tbl of beef drippings

Step 4:

In same skillet, cook Onion and Carrots until the Onions begin to soften 5-6 mins
Add Garlic, Rosemary, and Thyme, and stir and cook a couple minutes more
Add the Ground Beef and juices to the skillet
Stir in Tomato Paste
Stir and cook until Tomato Paste turns dark, about 4 minutes.
Add Wine, and stir and cook until almost completely evaporated, about 3 mins
Add Beef Broth and Worcestershire, stir and bring to a simmer
Sprinkle flour, and stir and continue to cook until thickened, about 5 mins
Add Corn and Peas, stir well and cook for a couple more minutes

Step 5:

Pour Ground Beef mixture into a 13x9 pan
Spread into an even layer
Dollop Mashed Potatoes on top
Spread Mashed Potatoes with a cooking spray oiled spatula and spread evenly
Sprinkle with Parmesan Cheese and Pepper

Step 6:

Bake @ 400* on middle rack for about 25 mins – until bubbling
Remove from oven
Turn oven to high broil
Place dish on top third of oven, and broil until potatoes begin to brown
Sprinkle with remaining Parmesan
Let cool 10 mins before serving.

Irish Soda Bread​


Traditional Irish Soda Bread recipe.

Servings: 6

Calories: 580kcal

Ingredients
  • 4 cup Flour
  • 4 tbsp Sugar
  • 1 tsp Baking Soda
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup softened Butter
  • 1/4 cup melted Butter
  • 1 1/4 cup Buttermilk
  • 1 Egg

Instructions​

  • Preheat oven to 375.
  • Grease a baking sheet.
  • Mix together flour, sugar, baking soda, baking powder and salt.
  • Add 1/2 cup butter, 1 cup buttermilk and egg to dry ingredients and mix until combined.
  • Flour work surface.
  • Turn out dough and knead briefly.
  • Shape dough into a round shape and place on prepared sheet.
  • Whisk together 1/4 cup melted butter with 1/4 cup buttermilk.
  • Brush loaf with buttermilk mixture.
  • Cut an X in the top of the loaf.
  • Bake 45 minutes or until toothpick inserted into the middle comes out clean.
  • Brush with buttermilk mixture every 15 minutes or so while baking.

Notes​

This is the best authentic Irish recipe for traditional soda bread.

You could add some cheese and chives to that recipe for a non Irish savoury flavour.
And I hope no-one cooked their cabbage lightly...oh no folks- the traditional way is to boil it to death for hours, you know when its done when it tastes of dishrags and the smell is permeated forever into every wall of your home 😂 ☘️
