This started out as a joke but is actually pretty damn good.
2- cups instant mashed potatoes
2-eggs, you can use one
Add water till you have a dough
Make Pattie’s and fry in 1/2” of oil about 4 minutes each side

I kicked it up
Add chopped onion and a hand full of pepper jack cheese
Serve with 2 fried eggs on top, or by itself

yes, without the onions. it tastes different not mixed for some reason.
I just make a patty and fry an egg and top it. lotsa' mayo, maybe a tomato.

I accidently invented this by intending a breakfast sandwich with hash browns, sausage, egg, and cheese and finding out AMC had already eaten the sausage.

On a job site in Texas, The local Roach Coach served a gut bomb. Sammich It is, 3-fried eggs, 3.sausage patty’s, 3- pcs bacon. On 2- pcs Texas French toast.
know a guy that was fired after earring the bomb. He found a hidy hole and took a nap.
 
I have a grits recipe for you. before you even add the grits, pour three blended eggs into the boiling water. add a cap of cooking oil or butter so the grits don't clump, add your grits and reduce heat, simmer for 5 minutes and add 2 diced Jalapeno peppers or two tablespoons of pepper relish, plain not sweet. stir in 1/2 cup of shredded cheese and cover 10 minutes.
You can add cubed ham or bacon. serve on buttery Dave's good seed Texas toast.
