In my wildest dreams, that is not at all how I would have expected it to be made. I would have just thought that it would have been cooked until it reduced down.
That is pretty neat. I wouldn't have guessed either. This make a 2nd first for me concerning Sicily. I had never seen or heard of a blood orange before. I was in Sicily early in the year when a species of blood orange got ripe. It blew my mind. I remember blood oranges, bad drivers and the glow of the volcano at night (Mt. Etna).
I wondered the same thing.
I looked it up and it seems a lot of Europe doesn't have a big fly problem.
