For clarity, those are red snappers. We catch 'redfish' also.
They are bottom-feeders, like catfish:
They pretty good size too

The meat on redfish is pretty bland, best smoked on the grill over mesquite.
Leave the scales on the filets and they all weld together to become a 'meat tray' when the meat separates from the skin
