I'm not sure about the filling but I do know the best crust is made without water vodka replaces the water. It makes the best crust ever and is the only way we make pie crust for past 10 years or so.
I'll look up my old timers recipe book and get back to you on the filling.

It is my understanding that pumpkin, winter squash & sweet potato can be interchanged in any recipe.
1 1/2 cups of sweet potato
3/4 cup sugar
1/2 teaspoon of salt
1-1 1/4 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmag
1/2 teaspoon cloves
3 slightly beaten eggs
1 1/4 cups milk 1-9 inch unbaked pastry shell
bake at 400 F for 50 minutes
