GrazieOK. Here's my famous ketchup recipe.
1-tbs olive oil
1-medium onion, or onion power
1- jalapeno pepper, chopped - optional
3- cloves garlic, minced
1- 28 ounce can tomato, diced w juices. Or 2-1/2 pounds fresh tomatoes chopped
1/3 - cup brown sugar
3- tbs tomato paste
1/3- cup apple cider vinegar
2- tbs Worcester sauce
1/2- tsp chili power or cayenne or both. Optional
1/2- tsp ground mustard
1/4- tsp ground cloves
1/4- tsp allspice
1/8- tsp ground black pepper
1/2- tsp salt
1. Heat oil in medium sized pot. Add pepper and onion. Cook down 5 min.
2. Add garlic. Cook 1 min.
3. Add diced tomatoes, brown sugar, cider vinegar, tomato paste, Worcester sauce, chili powder, ground mustard, cloves, allspice, black pepper and salt, stir
4. Bring to boil. Then reduce heat and simmer for 45 - 60 minutes
5. Let cool some. Then puree the mixture in blinder. Process in batches
6. Strain the ketchup through a fine mesh sieve to give it a smooth texture.
Makes about 3 cups.
I normally double or triple this recipe. Plus I usually add some crushed dried hot peppers for a hot version.
