I finally got around to making the split pea soup today with chunks of ham. Also made a beef roast in crock pot, scallop potatoes, green beans, cornbread in iron skillet, and simmered some fresh sliced peaches out of freezer on side with a little sugar for those who wanted something sweet
If I'm ever in your area, I know where I'm stopping for a meal!

Was just watching the Wierd History channel. Things soldiers are eating during the Civil War. Hard tack was on both sides. Interesting to watch. Other include the Great Depression, WW1 and WW2. I find it very interesting.
This is probably not something anyone wants to discuss, but can you imagine the constipation days on end of hardtack would cause?

Meatballs and shrimp cocktail.
Very thin, boneless pork loin chops, baked potatoe, corn on cobb...
I'm liking the spicy nacho's, meatballs, tacos and shrimp cocktail! Keep the ideas coming folks. Sounding good. I'm seeing visions of buffet spread coming together soon!

We had falafels with some lemon tahini sauce and some moroccan veggies. It was so good.

Taco Lasagna. Tortillas rather than noodles. Taco meat, Serrano, corn, sour cream instead of ricotta, salsa, onions, shredded cheddar.
I thought my stroke of genius was the baking dish same size of the tortilla.

I know folks that use flour tortillas cut up in strips for "dumplins" in chicken n dumplings....they say they love them....haven't tried it but sounds like flour tortillas work good for replacing noodles, dumplins and similar...seeing how EW used them for lasagna too.
I think I'll buy up and freeze some flour tortillas for such uses in future...sounds like a good idea! (Although I prefer corn tortillas with my Mexican food). Guess I could freeze both? I've never tried making either myself.

To make your own you really need a press. Smaller corn size ones are 20-30 bucks. Tried to do pics but there seem to be an issue with downloaded ones
Corn would work with my recipe, just would have to cut and fit smaller ones to a pan.

Venison stir fried with garlic, black mushrooms and green onions; and air fried white sweet potatoes.
Homemade fried rice with frozen sweet peas thrown in and chopped green onion on top...I used brown rice which i normally don't use for fried rice. 1 son said rice wasn't fully done, the other son said "too spicy" and all I put in was soy sauce! 1/3 cup and had more rice than usual in the skillet. Other than that, a bit of salt n pepper, sauteed onion, the usual scrambled eggs!

Fresh beef... T-bones, rib eyes n sirloin...My son's boss raised and recently butchered, and was generous enough to share several cuts with my son to bring home. I made twice baked potatoes, opened up 2 pints each of fresh corn n asparagus I had canned, stuffed mushrooms and deviled eggs.
Since I'm not a baker, I had a store bought Graham cracker pie crust, opened a can of cherry pie filling...had cool whip out of freezer...boom! Dessert! Chincy I know...but hey!..it was sweet and at at least 1 family member ate a piece! lol..
Beef was delicious and tender!

Toast.
We had a blueberry and cream cheese filled King Cake
My wife having interned at LSU had us King Cake shipped to us one time. I ate 3/4 of the cake so I found the prize.
Oh my goodness, that looks so amazing. My mouth literally watered.
I made Broccoli Manicotti for the first time and it is simply delicious!! Used a recipe from Chef John. I did modify it a bit.

I asked family to go out for dinner tonight.....I wanted to check out a new german place that went in and try the beer (even though I'm not big on beer), but mother wants Mexican so I guess I'm having salsa n chips, probably fajitas, refried beans, rice, and margaritas
Lasagna and salad. My husband's cooking while I get to sit on the couch. He said I earned it after my hardwork.
