Chicken, Sausage, Peppers & Potatoes - How to Roast Chicken, Sausage, Peppers & Potatoes




Ingredients
  • 4 eaches large links hot Italian sausage

  • 2 tablespoons olive oil, divided

  • 6 eaches bone-in, skin on chicken thighs

  • ½ pound assorted sweet peppers, seeded

  • 1 small red onion, sliced

  • ½ yellow onion, sliced

  • 4 large Yukon Gold potatoes, quartered
  • 2 teaspoons dried Italian herbs

  • 2 teaspoons kosher salt, plus more as needed

  • Freshly ground black pepper to taste

  • 1 tablespoon Chopped fresh Italian parsley

Sweet & Sour Chicken - Marion's Kitchen




INGREDIENTS
500g (1 lb) chicken thigh fillets, cut into roughly 3cm cubes

1 Tbsp light soy sauce

1 garlic clove, finely chopped

½ tsp ground white pepper

½ cup plain flour

vegetable oil for shallow frying, plus 1 tbsp

1 onion, cut into wedges

1 tomato, cut into wedges

3 spring onions (scallions), trimmed, green and white parts cut into 3cm batons
Sweet & Sour Sauce:

½ cup brown sugar

2 tbsp tomato ketchup

1 tbsp light soy sauce

3 tbsp white vinegar

1/3 cup pineapple juice

¼ tsp Chinese five spice

2 tsp cornflour
Sweet & Sour Sauce:

½ cup brown sugar

2 tbsp tomato ketchup

1 tbsp light soy sauce

3 tbsp white vinegar

1/3 cup pineapple juice

¼ tsp Chinese five spice

2 tsp cornflour
and the sweet and sour sauce and stir-fry until well combined. Toss through the spring onions. Remove from heat and serve

Easy way to make the tastiest Pepper Steak recipe for your family I cooking stir fry


INGREDIENTS : * 2 pounds of flank steak cut against grain into thin slices * 2 bell peppers cut into bite size pieces * 1 large onion * 3 cloves of garlic minced 1/2 thumb size ginger minced * 6 tablespoons oil (1/3 for marinade, 1/3 for stir frying of steak, 1/3 for stir frying vegetables) * 1&1/2 tablespoon of honey * 1/2 tablespoon chicken seasoning (substitute with all purpose seasoning) * Pinch each of crushed black pepper for marinade, and slurry * 1/2 cup of water * 2 tablespoon of soy sauce (1/2 light and 1/2 dark) * 3 tablespoons corn starch (1/2 for marinade, 1/2 for slurry) Marinate meat for 20-30 minutes prior to cooking. Place skillet on medium heat, add oil, wait till oil is sizzling hot and place steak in batches, spread out in pan for 2 minutes on each side, to obtain a sear/caramelization. Transfer cooked steak to a bowl to stop cooking. Repeat this process till all steak is cooked. Proceed with cooking vegetables in a wok by adding remaining oil to wok in high heat. Add remaining garlic and ginger, crushed black pepper and salt, stir and cook for under 30 seconds. Add vegetables and cook to your preferred crunch/done-ess. I cooked the vegetables not 1 minute. Add slurry (combination of water, corn starch, soy sauce, garlic and ginger), stir till thickened. Add cooked steak and stir to combine. Remove wok from heat and serve with rice.

Spicy Fried chicken better than KFC!



Ingredients
  • 1 whole chicken (Broken down with bones)
  • 1 tsp ground ginger
  • 1 ½ tablespoon smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp white pepper
  • 2 tsp salt
  • ½ tsp brown sugar
  • 1 tsp baking powder
  • 2 bay leaves
  • 1 cup full cream milk
  • 2 tablespoon Greek plain yogurt
  • 2 egg whites
  • 1 cup all purpose flour (plain)
  • ¾ cup cornflour (corn starch)
  • Vegetable oil, for frying
  • (Chili sauce)
  • Steps
    • Step 1
      In a mixing bowl, add the ground ginger, smoked paprika, cayenne pepper, onion powder, garlic powder, white pepper, salt, and brown sugar. Mix well.
    • Step 2
      On your chicken pieces, sprinkle approx. 2 teaspoons of the spice mix and coat each side evenly. Keep the rest of the spice mix for later.
    • Step 3
      In a marinating container or mixing bowl, add the milk, yogurt, 2 whole egg whites, one tsp of salt and 2 bay leaves, mix well. Add the spice coated chicken to the milk marinade, cover, refrigerate and marinate overnight or a minimum of 2 hours.
    • Step 4
      The following day or 2 hours later, remove the chicken from the fridge for 30 minutes to bring to room temperature. Heat up your deep frying oil to a temperature of 320°F – 160°C.
    • Step 5
      While the oil is heating, add your leftover spice mix to a mixing bowl along with the “all purpose” flour, cornflour (cornstarch) and baking powder. Mix well.
      • Step 6
        Remove the chicken pieces from the milk marinade and place in spicy flour coating one at a time. Repeat process until each piece has been coated in flour mix.
      • Step 7
        Now do a second coating by repeating the previous step. Re-dip in the remaining marinade mix.
      • Step 8
        Place the chicken in the hot oil 2 or 3 pieces at a time, turn down the heat so the chicken maintains a cooking temperature of 280°F – 140°C until golden brown. These will take approx. 12-15 minutes. Remove and place over a wire rack for the fat to drip. Serve immediately with your favourite hot chili sauce.
      Little Tips

      When doing the second coating, you can let the first coating dry in the fridge for 30 minutes. The second coating will adhere better to the chicken if that's a problem.
      When heating your oil, to maintain a constant temperature of 320°F - 160°C, bring it to the right temperature first without the chicken, then take note of your gas or power level, now when you add your chicken, you know the exact level to turn it down to.

Spicy Mississippi Chicken Recipe



Chicken Leg Quarters were the first pieces of chicken that I learned to cook when I started out on my bbq journey. I could buy a bag of frozen quarters for .25 cents per pound, and that would feed a lot of people on the cheap. Somewhere along the way I started calling this particular recipe my Spicy Mississippi Chicken and the name stuck.... You can use any piece of chicken for this recipe but I would definitely keep the skin on.This recipe is all about the smoke and spice. There’s no marinade, brine, glaze or anything that will take away for the texture. The seasoning builds a nice crust on the skin and it’s almost crispy with a kick of heat. For the seasoning I kept it pretty simple and used a combination of seasonings that were in the pantry. I knew I wanted it spicy so the whole thing revolved around the peppers. I used ground cayenne, crushed red pepper flakes, white pepper for back end heat and plenty of corse ground black. The heat was on point, and I used corse salt, sugar, onion and garlic flakes and few herbs to round it out. I used my Plastic Dredge Shaker with a wide-hole lid https://h2qshop.com/collections/barbe... (You can also use this blend as a rotisserie seasoning; it goes great on pork). You can cook this chicken on any grill or smoker; the key is the cook temperature. The pit needs to be running at 300 degrees to get the skin right. I used my Traeger pellet grill running with pecan pellets for this cook. First I dried the skin with paper towel to remove any moisture then I coated each piece with a little peanut oil. The oil helps the seasoning stick and it also browns the skin.
Each piece of chicken is generously coated with the Spicy Chicken seasoning *recipe below. Place the seasoned chicken on the grill and cook until an internal meat thermometer reads 175 degrees in the thickest part of the thigh. If you’re cooking white meat chicken, it needs to hit 165 degrees internal - and I use my Thermoworks Thermapen to check my internals http://bit.ly/H2QThermapen Once the chicken is done all you do is let it rest for 5 minutes and it’s ready to eat. Right away you’ll notice the skin is beautiful. The spices and herbs give a crispy-like texture and it has a spicy punch without being too hot. You can always add different peppers or change the amount of each to give it even more kick! Spicy Mississippi Chicken Ingredients - 4lb Fresh Chicken Leg Quarters, skin on (any pieces of chicken can be substituted) - ¼ Cup Peanut Oil - 3 Tablespoons Coarse Kosher Salt - 2 Tablespoons Sugar in Raw - 1 Tablespoon Paprika - 1 Tablespoon Smoked Paprika - 1 Tablespoon Herbs de Provence - ½ Tablespoon Coarse Ground Black Pepper - ½ Tablespoon Garlic Flakes - ½ Tablespoon Onion Flakes - 1 Teaspoon Cayenne Pepper - 1 Teaspoon White Pepper
- 1 Teaspoon Crushed Red Pepper Spicy Mississippi Chicken Directions. 1. Preheat pellet smoker to 300 degrees using pecan wood pellets for smoke flavor. You can use any grill or smoker for this recipe just keep the temperature steady at 300 degrees. 2. Pat the chicken dry with paper towel to remove excess moisture. Trim away any unwanted skin or fat if necessary. 3. Lightly brush the outer surface of each leg quarter with peanut oil. 4. To make the spicy chicken seasoning: Combine the remaining ingredients in a jar and shake well. 5. Place the seasoning in a shaker dredge with large openings. Coat the outside of the leg quarters with a medium heavy coat of the seasoning. 6. Place each leg quarter on the pellet grill and cook until internal temperature reaches 175 degrees in the thickest part of the thigh. (For white meat the internal needs to reach 165 degrees) 7. Remove each piece from the smoker and rest for 5 minutes before serving.

RECIPE: COCKTAIL MEATBALLS 2 lb. ground sirloin 2 eggs 2 tbsp. dried onion flakes 1/4 tsp. pepper 1/3 c. catsup 1 c. crushed corn flakes 1/3 c. parsley flakes 2 tbsp. soy sauce 1/2 tsp. salt 1 lb. can jellied cranberry sauce 2 tbsp. lemon juice 12 oz. jar chili sauce 2 tbsp. firmly packed brown sugar Combine first 9 ingredients. In a medium saucepan, combine last 4 ingredients. Stir last 4 ingredients occasionally until well blended and smooth. Roll meatballs to the approximate size of a walnut. Should make about 48. In a jelly roll 13 x 9 x 2 inch (or close enough) place rolled meatballs. Place meatballs in oven uncovered at 400 degrees for 25 minutes. Put meatballs in sauce and keep warm to serve. Serve hot.

When we came out of the bush for supplies once a year, my brothers were expected to "finish their plate or else." Steaks were rare because dang near every one could polish off a steak of any size if they were back woods types. I remembder that on one trip, McDonalds was just built. The only one for hundreds of miles. Dad talked them into an eating challenge. My oldest brother had to eat 25 cheese burgers,

Food challenges became unsustainable and went the way of the dodo bird.
